If you have a dehydrator, these are super easy to make, nutritious and are great with a beer! They can be as hot as you want but don’t be afraid to use a LOT of wasabi; once everything dries, a large amount goes a little way. We made a giant bowl (4 or 5 massive yams) of these and used an entire jar of wasabi and the heat was barely there!

I am a massive proponent of using a mandoline when dehydrating – it speeds things up and makes the results more predictable. To make these matchsticks, we used the scariest mandoline in the world.
They’re simple to make as well!

DEHYDRATED SWEET POTATO MATCHSTICKS WITH WASABI – INGREDIENTS
- 4-5 large yams (though you can use any amount you want)
- 0.25 cups lemon juice
- Lots of wasabi (we used a tube we had lying around)
- 2 teaspoons umeboshi vinegar (if you don’t have it, increase the salt)
- A hefty pinch of salt
DEHYDRATED SWEET POTATO MATCHSTICKS WITH WASABI – INSTRUCTIONS
- Cut yams into matchsticks
- Toss all ingredients together. Marinade for 30-45 minutes, tossing every 5 minutes or so.
- Place matchsticks in dehydrator, dry at 125 degrees (if you have a variable temperature dehydrator).
- After a few hours, toss the matchsticks (this will help prevent them sticking together).
- When fully dry you will need to break apart any clumps that have formed; check that they are fully dry at the same time.
